In 1998 Audrey McDonald and John Carty brought together their
professional abilities to form a unique private catering company
that has organised many exclusive and memorable events throughout
Ireland. These events have included Bono's 40th birthday party,
the launch of Louise Kennedy's crystal and celebration parties
for the supermodels show.
Audrey's cooking experience started in London where she trained
at the exclusive cordon bleu cookery school in 1987. Throughout
her 5 years in London she catered for ambassadors, heads of state
and royalty, including King Hussein and Queen Noor of Jordan.
On her return to Ireland she quickly became established as caterer
to the stars where her client list included U2, Angelica Huston,
the Rolling Stones and the Duchess of Abercorn. She also became
involved in the corporate entertaining market where her flair
and creativity were greatly welcomed.
On completing his London City and Guilds, John's career started
in the renowned Trudie's of Dun Laoghaire. He rapidly rose up
the ladder as head chef to such well known restaurants as Shrimps,
the Grey Door and La Stampa restaurant. Having experienced the
restaurant scene, he joined the Fitzwilliam group for two years
overseeing their private reception rooms and co-ordinating up
to 1,000 clients
per day.
At this point, Audrey and John joined forces. Since their amalgamation,
their client list has grown and their reputation has soared. Each
event is dealt with on a different level as they and their staff
continually seek new styles and ideas to suit the particular host
and event, be it a themed fun party or a formal wedding. Menus
are created using top quality ingredients in astonishing combinations.
Audrey & John know exactly how to balance colour, texture
and flavours so the food looks and tastes amazing. Their menus
are adapted and created to suit the individuals requirements.
